Mango Salsa

Mango Salsa is sweet, fresh, light and healthy. Each ingredient brings a beautiful color and fantastic flavor to this versatile topping. Mango salsa is a great way to brighten up a summer time meal and pairs well with scallops, tuna, salmon, beef, pork and chicken.  This is a great accompaniment to fresh guacamole and chips. The pairing options are endless with this mouthwatering salsa. 

INGREDIENTS:

  • 1 ripe mango, peeled and diced
  • 1 small red bell pepper, seeded and diced (We like to use a variety of colored bell peppers)
  • 1 jalapeno, seeded and finely chopped
  • 1 inch fresh ginger root, grated
  • 1/4 cucumber peeled, seeded, and chopped
  • 20 blades fresh chives, chopped OR 4 green onions, chopped
  • 1 lime, juiced

DIRECTIONS:

  1. Combine all ingredients in a large bowl and stir. Then ready to serve
