INGREDIENTS:
- 1 ripe mango, peeled and diced
- 1 small red bell pepper, seeded and diced (We like to use a variety of colored bell peppers)
- 1 jalapeno, seeded and finely chopped
- 1 inch fresh ginger root, grated
- 1/4 cucumber peeled, seeded, and chopped
- 20 blades fresh chives, chopped OR 4 green onions, chopped
- 1 lime, juiced
DIRECTIONS:
- Combine all ingredients in a large bowl and stir. Then ready to serve
