INGREDIENTS
- 1 lb. Crab meat
- 1 tbs. Butter
- 1 Garlic clove, minced
- 1 Green onion, sliced
- 1 tbs. Bell pepper, diced
- 3 tbs. Heavy cream
- 1 tbs. Dijon mustard
- 1 Egg, beaten
- 1 tsp. Basil, chopped
- 1 tsp. Parsley, chopped
- 1 cup Breadcrumbs
- 1/4 cup Parmesan, grated
- Cayenne to taste
DIRECTIONS
Melt butter in a skillet over medium heat. Sauté onion, peppers, and garlic until the pepper is soft, about 3 minutes. Add the cream, mustard, cayenne. Gently fold into the crab meat mixture of crab, parmesan, breadcrumbs, eggs, parsley, and basil. Form patties about ½ inch thick. Refrigerate until firm.
