INGREDIENTS
- 1 lb. crab meat
- 1 tbs. butter
- 1 garlic clove, minced
- 1 green onion, sliced
- 1 tbs. bell pepper, diced
- 3 tbs. heavy cream
- 1 tbs. dijon mustard
- 1 egg, beaten
- 1 tsp. basil, chopped
- 1 tsp. parsley, chopped
- 1 cup breadcrumbs
- 1/4 cup parmesan, grated
- cayenne to taste
DIRECTIONS
Melt butter in a skillet over medium heat. Saute onion, peppers, and garlic until the pepper is soft, about 3 minutes. Add the cream, mustard, cayenne. Gently fold into the crab meat mixture of crab, parmesan, breadcrumbs, eggs, parsley, and basil. Form patties about ½ inch thick. Refrigerate until firm.
