Beet Salad with Citrus, Jicama, Pistachios, & Orange – Apple Cider Vinaigrette
INGREDIENTS
- 1 beet, roasted & sliced
- 2 oranges, sliced into half wheels
- 1/3 cup Jicama, peeled & sliced into thin sticks
- 2 tbs. pistachios
- Orange – Apple Cider Vinaigrette
- Salt, to taste
- Black pepper, to taste
- Microgreens, for garnish
Orange – Apple Cider Vinaigrette
INGREDIENTS
- 2 tbs. olive oil
- 1 tbs. orange juice
- 1 tbs. apple cider vinegar
- 1/2 tsp. dijon mustard
- 1 tbs. shallots, finely diced
- Salt, to taste
- Black pepper, to taste
DIRECTIONS
In a bowl, whisk together ingredients and let sit for shallots to marinade. Before serving, let the beets marinate in the dressing as well as the citrus and jicama (in separate bowls).
