Sweet Corn Cakes
- 3 cups Fresh corn kernels
- 1 Red onion, chopped
- 2 Eggs
- 1/2 cup Cilantro, chopped
- 1 cup AP Flour
- 1 1/2 tsp. Baking powder
- Salt
- Black pepper
- Light olive oil (for cooking)
Place ⅔ amount of corn kernels, onion, eggs, cilantro, flour, baking powder, salt, and pepper in robot coupe and process until smooth. Fold remaining corn kernels into mixture.
Avocado Salsa
- 2 Avocados, diced
- 1/2 cup Cilantro leaves
- 2 tbs. Lime juice
- 2 tbs. Green onions, chopped
- Tabasco, to taste
- Salt, to taste
- Black pepper, to taste
