INGREDIENTS
- Shrimp, peeled & deveined
- 1 tbs. olive oil
- 3 garlic cloves, minced
- 1 shallot, finely diced
- Chili flakes, to taste
- 2 lemons, juiced
- 1/2 cup white wine
- 2 tbs. capers
- 1/2 cup diced tomatoes
- 1/2 cup seafood stock
- 1/2 cup butter, cubed
- Basil, for garnish
DIRECTIONS
In a pot, heat olive oil and add the shallots and garlic and saute for 2 minutes until softened. Deglaze with white wine and cook until it is almost evaporated. Add the seafood stock, chili flakes, capers, tomatoes, lemon juice, and butter. Cook shrimp in sauce for 2 minutes or until fully cooked. Garnish with chopped basil.
