INGREDIENTS
- 2 cucumbers, peeled, cut into noodles, and drained
- 1/4 cup rice wine vinegar
- 1/4 cup lime juice
- 1/4 cup honey
- 1/2 tsp. soy sauce
- 1/2 tsp. sesame oil
- 1/2 tsp. sriracha
- 1 tbs. ginger, grated
- 1 tbs. sesame seeds
- Scallions, julienned (garnish)
- Mint, freshly torn (garnish)
DIRECTIONS
In a bowl, whisk together vinegar, lime juice, honey, soy sauce, sesame oil, sriracha, and ginger. Marinate cucumber noodles in marinade. Toss with sesame seeds, scallions, and mint.
