Marinated Cucumber Noodles

INGREDIENTS

  • 1 Cucumber, peeled into thin ribbons
  • 1/3 cup Rice wine vinegar
  • 1/3 cup Lime juice
  • 1/3 cup Honey
  • 2 tsp. Soy sauce
  • 2 tsp. Sesame oil
  • 2 tsp. Sriracha 
  • 1 tbs. Ginger, grated
  • Black or white sesame seeds
  • Scallions, thinly sliced
  •  Mint &/or cilantro, chopped

DIRECTIONS

Whisk together vinegar, lime juice, honey, soy sauce, sesame oil, sriracha, and ginger. Pour over cucumber ribbons and toss with sesame seeds, scallions, and herbs. Let sit for 30 minutes.
