Jerk Marinade

INGREDIENTS

  • 12 yellow Onions, chopped
  • 6 cups Scallions, finely chopped
  • 8 tbs. Thyme, chopped
  • 4 tbs. Salt
  • 4 tbs. Brown sugar
  • 4 tbs. All spice
  • 6 tsp. Nutmeg
  • 6 tsp. Cinnamon
  • 4 tbs. Black pepper
  • 12 Scotch bonnet peppers (or habanero)
  • 2 1/4 cups Soy sauce
  • 3/4 cup Canola oil
  • 3/4 cup Apple cider vinegar

  • 8 yellow Onions, diced
  • 12 Carrots, diced
  • 16 Celery stalks, diced
  • 4 gallons Chicken stock
  • 2 gallons Veal stock
