Jerk Marinade
INGREDIENTS
- 12 yellow onions, chopped
- 6 cups scallions, finely chopped
- 8 tbs. thyme, chopped
- 4 tbs. salt
- 4 tbs. brown sugar
- 4 tbs. all spice
- 6 tsp. nutmeg
- 6 tsp. cinnamon
- 4 tbs. black pepper
- 12 scotch bonnet peppers (or habanero)
- 2 1/4 cups soy sauce
- 3/4 cup canola oil
- 3/4 cup apple cider vinegar

- 4 sides of pork belly, marinated & seared
- 8 yellow onions, diced
- 12 carrots, diced
- 16 celery stalks, diced
- 4 gallons chicken stock
- 2 gallons veal stock
