Jerk Marinade
INGREDIENTS
- 12 yellow Onions, chopped
- 6 cups Scallions, finely chopped
- 8 tbs. Thyme, chopped
- 4 tbs. Salt
- 4 tbs. Brown sugar
- 4 tbs. All spice
- 6 tsp. Nutmeg
- 6 tsp. Cinnamon
- 4 tbs. Black pepper
- 12 Scotch bonnet peppers (or habanero)
- 2 1/4 cups Soy sauce
- 3/4 cup Canola oil
- 3/4 cup Apple cider vinegar

- 4 sides of Pork belly, marinated & seared
- 8 yellow Onions, diced
- 12 Carrots, diced
- 16 Celery stalks, diced
- 4 gallons Chicken stock
- 2 gallons Veal stock
