INGREDIENTS:
- 3/4 cups mayo
- 2 tsp. dijon mustard
- 2 tsp. lemon juice
- 1 tsp. honey
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 3 1/3 lb. chicken breast, cooked & shredded
- 1/2 red onion, finely diced
- 1/2 cup celery, diced
- 1/2 cup dried cranberries
- 1/2 cup pecans, toasted & roughly chopped
- 2 tbs. tarragon, chopped
DIRECTIONS
In a large bowl, combine the mayonnaise, dijon, lemon juice, honey, salt, and pepper and whisk until well combined.
To the same bowl, add the chicken, celery, onion, cranberries, pecans, and tarragon. Toss until incorporated. Taste and adjust seasonings if needed.
