INGREDIENTS

Meatballs

  • 10 lbs. ground pork
  • 10 lbs. Italian sausage
  • Rendered & pulsed bacon
  • Salt
  • Black pepper
  • 6 T + 2 t chili flakes
  • 6 T + 2 t fennel seed, crushed
  • 20 eggs
  • 5 cups sour cream
  • 6 2/3 cups chopped parsley
  • 10 cups grated parmesan
  • 10 cups toasted panko breadcrumbs
  • 2 1/2 – 5 cups olive oil

Brown Sugar & Jalapeno Glaze

  • 53 oz. (3 1/3 cups) maple syrup
  • 53 oz. (3 1/3 cups) light brown sugar
  • 80 oz. (5 cups) water
  • 6 2/3 oz. (1/4 cup) jalapeƱos, crushed 

DIRECTIONS

Add ingredients into the pot and let reduce at low heat until the sauce has a syrup-like consistency.

Corn Bleu Cheese Relish

  • 1 qt. (10 ears) raw corn kernels
  • 1 cup bleu cheese, crumbled
  • 1/2 cup lemon juice
  • 1/4 cup honey
  • 1/2 cup olive oil
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1/4 cup basil and/or parsley, chopped
  • 1/4 cup scallions, thinly sliced
