Meatballs
- 10 lbs. ground pork
- 10 lbs. Italian sausage
- Rendered & pulsed bacon
- Salt
- Black pepper
- 6 T + 2 t chili flakes
- 6 T + 2 t fennel seed, crushed
- 20 eggs
- 5 cups sour cream
- 6 2/3 cups chopped parsley
- 10 cups grated parmesan
- 10 cups toasted panko breadcrumbs
- 2 1/2 – 5 cups olive oil
Brown Sugar & Jalapeno Glaze
- 53 oz. (3 1/3 cups) maple syrup
- 53 oz. (3 1/3 cups) light brown sugar
- 80 oz. (5 cups) water
- 6 2/3 oz. (1/4 cup) jalapeƱos, crushed
DIRECTIONS
Add ingredients into the pot and let reduce at low heat until the sauce has a syrup-like consistency.
Corn Bleu Cheese Relish
- 1 qt. (10 ears) raw corn kernels
- 1 cup bleu cheese, crumbled
- 1/2 cup lemon juice
- 1/4 cup honey
- 1/2 cup olive oil
- 2 tsp. salt
- 1 tsp. pepper
- 1/4 cup basil and/or parsley, chopped
- 1/4 cup scallions, thinly sliced
